The Land
Our vineyards are planted on south-facing slopes at about 600 meters above sea level, at the edge of a wide valley in the medieval village of Orcau, Pallars.
Grapes were grown here for over two thousand years. In the twentieth century this viticulture was practically lost — we are part of its revival. When we founded Sauvella, there was only one other winery in the area; today there are about fifteen winemakers in the Pallars.
A Unique Terroir
Orcau sits in the Tremp basin, a valley rich in geology. Nearly all our vineyards root in reddish to gray, mineral-rich sandy marls and clays — terrestrial sediments from the erosion of the older Pyrenees, exceptionally high in carbonates.
A Mediterranean influence meets a continental mountain climate: huge day–night temperature swings concentrate flavours, while wet winters and dry summers suit the grapes perfectly.
Beyond Organic
Life in the Soil
We never till. A permanent cover crop and straw mulch create a vibrant microbial universe.
Partners, Not Pests
Our flock of sheep are the winter vineyard crew — naturally fertilizing and managing vegetation.
Resilient Borders
Plots surrounded by wild forest encourage the biodiversity that balances the ecosystem.
We accept frost, hail and drought as part of the high-mountain rhythm, intervening minimally and with profound respect for the plant's own wisdom. Regenerative viticulture gives us the quality of grapes we need for natural wine.
Nine Varieties, 5.5 Hectares
Planting since 2004 on dry-farmed land, including the last old vineyard of Orcau. Main varieties: Red Grenache, Syrah and Red Sumoll — all on low-vigor rootstock, no irrigation, dependent solely on rainfall.
A Watchful Guardian
Respectful winter pruning, careful green work after spring frosts, daily tasting from September until each variety reaches perfect ripeness — often later than most wineries. No chemical treatments for over five years: your wine is born from pure fruit, zero chemical input.
